This is my attempt to create sort of a virtual memory of not only recipes that I have had and that I have liked, but also restaurants that I have tried and meals that I like there as well!!! I have done a bit of traveling, and now that I have this site, I hope to keep better track of some of the delicious meals abroad that I have gotten to try!!! My favorites include Shepard's Pie from Ireland as well as Burek and sopska salata from Bosnia!
Chicken Kabob, Grilled Sweet Potato and Sopska!
There are a few super tasty things going on here!
First, a basic chicken kabob with red pepper and onion, lightly marinaded in olive oil and various spices, probably paprika and something green.
Second, grilled sweet potato almost fry chunks! Also lightly marinaded in light olive oil and paprika! yum yum yum!
Last, my favorite, the sopska (pronounced shope-ska) salata, inspired by my brief month in Bosnia! It's mini English cucumbers, grape tomatoes, salt and of course, olive oil! Normally I would also add feta or goat cheese- in this dish I did not. Still Super delicious!

Southwest-ish salad!
In an attempt to be more healthy and eat more natural things, I came across this salad! It's delicious, and I will be eating it often! I used:
-2 cups of spinach
-1/2 cup black beans
-1/2 cup garbanzo beans
-1/4 cup feta
-1/4 cup chopped sweet peppers
-5 oz chopped little tomatos
-1 Tbsp Trader Joe's cilantro lime dresing
-1/3 of a spinach pepper feta scone from the Whole Foods Coop

Vacation in New Orleans!
I didn't actually make this one, but... when in Rome! Or, When in New Orleans, rather. Jambalaya and a Po Boy! Deliciousness! I didn't brave any of the sea food but... this stuff was pretty good. The pralines, too! MMM!
Baked oatmeal greatness
I tell ya. The smell and the taste of this wonderful dish was just... absolutely unbelievable. It was relatively healthy and delicious and... did I mention the smell? A mixture of wonderful oatmeal and cookies and everything that makes breakfast great (minus greasy bacon.. there was none of that).

Stacked Roasted Vegetable Enchiladas
This is one of my favorite dishes!!! It's just roasted vegetables... with a layer of tortillas... this could honestly make someone a vegetarian. YUM!

Berry Bliss Pancakes
This recipe was inspired by the Berry Bliss Pancakes at Wild Berry Restaurant just outside of Chicago. They were pretty darn good. I had a great oatmeal pancake recipe, to which I added blueberries. I also used Blackberry Coulis and a Cream Auglaise. I am going to find a new recipe for the Cream Auglaise, it turned out pretty thin, and I feel like it should have been a bit thicker. But, I will be making them again!
